Raiding your competitor's office and acquiring documents would obviously be illegal - however, did you know in many cases much of this information is available online through web sites? Information published on a web site is public information and therefore it is not illegal to obtain documentation that would otherwise be illegal to have.
For instance, many competitors may list their customers on their web site. Or their customers may list them on their vendor/partner/supplier pages. Some competitors may list pricing information on their web site or have it available for download. Sometimes competitors list very specific product information when describing their product online. Many times there are documents or diagrams which may be useful in understanding their methods.
Also, you can find out what keywords your competitors are bidding for in Pay Per Click advertising campaigns. You can see what areas they are targeting and guestimate their budgets. You can then cleverly counter these campaigns with campaigns of your own.
Overall, you can learn alot online - you just need to know where and how to look!
